Drain pasta in a colander and pour into a deep baking dish. Use part or all pepper jack cheese in place of the cheddar. Cook pasta in a large saucepan of salted, boiling water, following packet directions until tender. Cook the macaroni in salted boiling water for about 2 to 3 fewer minutes than indicated on the package directions. For some Tex-Mex color and flavor, add about 1/4 cup of sliced ripe olives, a small can of chopped mild green chile peppers, and 1/2 cup of diced red bell pepper.For a main dish option, add about 1 to 1 1/2 cups of cooked diced ham to the macaroni and cheese mixture. Or brown about 1/2 pound of ground beef or pork sausage along with 1/2 cup of chopped onion.Pour macaroni mixture into 9x13 baking dish. In a medium saucepan, heat soup and milk over medium heat until simmering. Preheat oven to 350 degrees F (175 degrees C). Add pasta and cook for 8 to 10 minutes or until al dente drain. To make a mac-n-cheese with bacon, stir about 1/4 cup of diced cooked bacon into the sauce along with the cheese and macaroni. Repeat layers, ending with cheese and sprinkling the top with additional paprika. Top with half of the cheese and pour half of the liquid on top. Melt the butter, flour, and cream and bring the sauce to a simmer and then mix in the shredded cheese. Remove foil and bake for an additional 10 minutes. Cover with foil and bake at 350 for 35 minutes. Pour milk over the entire macaroni and cheese casserole. Sprinkle 1+1/2 cups of cheese over the top and repeat. Layer half of the macaroni onto the bottom of the baking dish. Sprinkle half of the flour mixture over the top and then top it with half of the butter slices. Add a breadcrumb topping: Omit the extra 1/2 cup of cheese in this recipe and toss one cup of fine soft breadcrumbs with two tablespoons of melted butter. Preheat the oven to 375 and grease a 9×13 baking pan with nonstick cooking spray. ![]()
